Easy and Delicious Pecan or Coconut Muffins

These are REALLY easy and really good.
They are always a hit and something that I make that always results in someone asking for my recipe.

1/3 cup butter
1 cup brown sugar
2 eggs
1 tbsp vanilla
½ cup flour
1 cup coconut or pecans (chopped)


Cream together melted butter, brown sugar, eggs and vanilla. Add flour and coconut or pecans. Best if mini or medium sized muffins. Bake 350 degrees for 12 – 15 minutes (until top is set).

Sometimes I divide the batter and add coconut to half and pecan to the other half to easily make both types.

Note – These muffins are really good! They are a heavy moist muffin that is usually gone the first day at our house. You can also use almonds and substitute almond extract for the vanilla.
