Panko-Crusted Bluefish

½ cup panko bread crumbs
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons Ancho chili powder (or any other chili powder you prefer)
1 tablespoon Old Bay seasoning
1 teaspoon herbs de Provence
2 tablespoons olive oil
4 filets of Bluefish (Mackerel or other strong thin filets would work too)

Preheat the broiler on high. Mix all the dry ingredients in a medium bowl. When the bread and spices are well combined add the oil.

Line a baking sheet with aluminum foil. Brush the foil with olive oil. Place the filets skin side down on the lined sheet. Cover each filet with the bread crumb mixture. Pat the mixture onto the fish firmly.

Broil on high for 5 minutes then set the oven temperature to 400 and bake for another 5-7 minutes or until done.
