TVP Sloppy Joes

Ingredients:

1 medium to large green pepper diced
1 medium to large red pepper diced
1 large or 2 small yellow onions chopped
1½ cups of boiling water
2½ cups of tomato sauce
1½ cups TVP (textured vegetable protein)
2 Tbsp. whole grain Dijon mustard (or more to taste)
2 Tbsp. chili powder (or more to taste)
dash of sea salt
2 Tbsp. Tamari (or more to taste)
7 or 8 grinds of fresh peppercorns
1 Tbsp. honey (or sugar if you are vegan and believe that “Honey belongs to the bees” crap)

 

Directions:

In a large covered frying pan or Dutch oven, “sauté” the onions, green and red peppers (Of course this is not in any remote way “sautéing” but humor the original cook okay?) When soft, add the remaining ingredients and stir thoroughly. Simmer covered on low-medium heat for 20 minutes, stirring frequently. Serve hot either as a sandwich on a bun, over toast, rice, English muffins…sky’s the limit. This recipe is delicious and tastes remarkably like the Sloppy Joes you grew up on…really. It can easily be doubled, tripled, whatever because it freezes well.
