Not Another Hummus Recipe…

1 1lb package of frozen peas
4 cloves garlic, smashed and peeled
¼ to ¾ cup olive oil
1 tablespoon curry powder
1 teaspoon kosher salt
¼ teaspoon nutmeg
1 teaspoon ginger powder

Add the frozen peas to a sauté pan and cook over medium high heat until thawed and slightly browned. This takes between 5 and 10 minutes depending on your pan, stove and patience.

Combine the cooked peas, garlic, spices and salt in the bowl of your food processor.  Pulse the machine 3 to 5 times to mix and chop the peas and garlic.  While the machine is running, pour in the oil until you have the desired consistency.

For a chunkier, dryer hummus use less of the oil.  If you like it smoother and richer, use more oil.
Serve with crackers, chopped veggies, pita or my favorite oven roasted cauliflower.
