Uncle Snookie's Celebration Barley Wine



Ingredients

12 lbs. MF Dry Malt
3 lbs. Pale Malt
½ lb. Dextrin Malt
½ lb. Crystal Malt 90 Degree
#1318 London Yeast
4 oz. Chinook Hops
1½ - 2 oz. Willamette Hops - Last 15 Minutes of the Boil
1½ oz. Cascade Hops (Finish)

Brewing

Mash grains with 4 quarts water at 170 degrees
Put in oven for one hour at 155 degrees
Sparge grains with 2 gallons of water at 170 degrees
Bring to a boil, add malt extract and 4 oz. Chinook Hops
Add 1½ to 2 oz. Willamette Hops for the last 15 minutes of a 1hour boil
Add 1½ oz. Of Cascade Hops during the finish (while cooling)


This really isn't wine. It's called that because of the high alcohol content. It's a British style ale and is very intense. Barley wine can be served at room temperature in a brandy snifter…or cold. Bottle in small bottles because it's a commitment to drink 12 oz. And you might not want to operate any large farm equipment after consuming barley wine.
