Rick’s Terrific Tuna Salad
1 - 12 oz. can of albacore tuna drained
1 - 5 oz. can of albacore tune drained
1 - small bunch scallions chopped (including greens)
¾ cup chopped green olives
4 tbsp. small capers drained (water packed)
1 ¼ cup chopped celery hearts
½ cup slivered almonds (toasted)
1 tbsp. Worcestershire Sauce
½ cup sweet pickle relish
2 (or more) cups Grape Seed Oil Vegenaise
This is not your momma’s tuna salad. And please keep in mind that all the ingredients can be in greater or lesser amounts for personal preference.
I use Vegenaise instead of mayonnaise for a couple simple reasons. #1 it’s blander and lets the other ingredients stand out.
#2 Grape Seed Oil Vegenaise promotes healthy HDL cholesterol … the very good kind.
Lightly toast the slivered almonds in a dry skillet or toaster oven. Combine all ingredients in a large bowl. Tuna salad can be served on bread, in a roll up, or all by itself.
Adding a little lettuce, spinach and some sprouts can make any Terrific Tuna Salad Sandwich that much more special!
