Tempura of Toad Hill Chinese Long Beans by Alana Shock

 2 lbs. Chinese Long Beans

Tempura Batter
1 cup all purpose flour
1 Tbs. corn starch
1 ½ cups seltzer water
small handful of ice cubes

Preheat deep fryer to 425 degrees
Wash, trim & cut beans into 2 inch pieces
Wisk together dry ingredients in a medium bowl
Set aside wet ingredients to add before frying

Combine wet and dry ingredients and gently mix with tongs until
combined but not smooth.  Check temperature and toss beans
in batter in 4 batches

Sauce Apropos
1 cup soy sauce
¼ cup sugar
2 tbs. garlic
2 tbs. chopped ginger
2 tbs. dark honey
½ cup mirin
pinch of cayenne
combine all in a pot, simmer and reduce by ½ & strain

Garnish with scallions
