Tomato Spread
1 can whole peeled tomatoes (28 oz can)
2 cloves garlic, smashed
¼ cup olive oil
Combine tomatoes and juices from can with the garlic in the bowl of a food
processor and blend until smooth. Add the olive oil slowly as the other
ingredients blend. Add salt to taste.
This mixture is fantastic spread over toasted crusty bread – either
as a snack, a garnish to a salad or with a meal. It is great as a fast pasta
sauce or with scrambled eggs. It is also yummy served as a sauce over steamed
broccoli or cauliflower.
