Birthday Cookies

1 cup vegetable shortening
2 cups flour
1/4 teaspoon salt
1 tablespoon baking powder
1 tablespoon vanilla
1 tablespoon almond extract
2 tablespoons almond milk
3/4 cup granulated sugar
Pre-heat the oven to 350 degrees fahrenheit. Line two baking sheets with parchment or silicone baking mats.
Cream the shortening and sugar until light and fluffy using a stand mixer on medium or with a hand mixer on high - around 2 minutes.
Add in the extracts and almond milk and continue mixing until fully incorporated.
Working in two batches, add the dry ingredients to the mixer. Reduce the speed to low and mix just enough to create a dough.
Make 12 1/4 up balls of dough. Flatten each ball into a disk approximately 1/3 of an inch think. Place onto the lined baking sheets.
Cook in the pre-heated oven for 7 minutes. Rotate the pans and bake another 8 minutes.
Let cool completely and ice using the icing of your choice.
