Max’s BBQ Ribs

4 or 5 slabs of Baby Back Ribs
1 slab = 12 to 14 bones

Rub
Chili Powder 4 Tbs.
Cumin 1 Tbs.
Coriander 2 Tbs.
Cayenne Pepper ½ tsp.
Salt 1Tbs.
Black Pepper 1 Tbs.
Celery Salt 2 Tbs.

BBQ Sauce
12oz. Bottle KC Masterpiece Original
1/3 cup Scotch or Bourbon

Coals
30 Charcoal Briquettes
Light and let burn until white/gray

Par-Boil
For every bottle/can of beer, use 2 bottles/cans of water
Recommend Amber beer
1 16qt. or larger pot

Prep and Cooking Process
Par-boil raw ribs
Place ribs into pot of rolling, boiling water/beer mixture
Bring back to a boil and let simmer at a slow-bubbling boil for 10-15 minutes.
While ribs are par-boiling, make the Rub and BBQ sauce
Remove ribs and let stand until cool
Coat ribs generously, top and bottom, with the Rub
Place ribs on the grill, cover and open vent
Cook for 2 hours, turning every 30 minutes.
Baste and turn the ribs with the BBQ sauce every 10 minutes for an additional 30 minutes.
Remove from grill and serve!
