Energy Bars (aka Cookie Balls)

2 cups pitted dates
8 figs
1 cup walnuts
1 cup peanut butter
1 tablespoon cinnamon
1 teaspoon ground ginger
¼ teaspoon nutmeg
1-2 tablespoons coconut oil
1\2 cup oat flour

Add the dates, figs and walnuts to the bowl of a food processor. Pulse until finely chopped. Add the peanut butter, spices and 1 tablespoon of coconut oil. Continue processing until a smooth paste. If the mixture doesn't hold together, add the second tablespoon of oil and process.

Form the mixture into 1 inch balls and coat with oat flour. Refrigerate for 2 hours or overnight. You can also spread into a lightly greased 8x8 pan, refrigerate for 2 hours then cut into bars.

Store the formed balls or bars in a sealed container in the fridge.

Variations: pistachio butter and pecans are a wonderful combination. Substitute 1 tablespoon Garam masala or Chinese five spice powder for the cinnamon/ginger/nutmeg. If you use almond butter instead of peanut butter, include a ¼ teaspoon salt as most almond butters do not have salt added.
